Thumbprint cookies

Jam thumbprints are usually one of the most classic types of Christmas cookies. Here’s your simple and easy Christmas special recipe to enjoy with your family, friends’ and loved ones!

 

Prep: 25 minutes

Servings: 36

Cooking: 20-22 minutes

 

Ingredients:

 

  •  - 115g of unsalted butter
  •  - 125g of Caster sugar (powdered)
  • - 1 large egg, separated
  • - 1 tsp of vanilla extract
  • - 175g of plain flour
  • - A pinch of Salt
  • - 25g of ground nuts (almonds or hazelnuts)
  • - 100g of raspberry or strawberry jam

 

Method:

 

Step 1

Preheat the oven to 180° Celsius or 350° Fahrenheit, lining two large baked trays with baking paper.

 

Step 2

Add the butter and 100g of sugar into a mixing bowl and beat together until it is light and fluffy. Then add the egg yolk and vanilla extract and beat well until all the elements are combined together. Then sift in the flour and salt and mix well.

 

Step 3

Mix the remaining sugar and the ground nuts together and spread it out on a plate. Lightly whisk the egg white in a separate bowl. Roll medium-sized pieces of dough into balls with your hands and then dip each ball into the egg white and roll it over some sugar. Place the balls on the prepared trays and gently press at the middle of each cookie with your thumb.

 

 

Step 4

Bake the dough in the preheated oven for 10 minutes and then remove them from the oven and press down again on each indentation and fill it with a jam of your choice. After filling each cookie, let the cookies bake for a further 10-12 minutes or until it is golden brown. Once it is out of the oven, turn the trays upside down at once and keep the cookies on a wire rack to cool completely.

 

For final touches, while the cookies are still warm, sprinkle some icing sugar over the cookies and scrumptiously enjoy!
