Coconut and Lime cake

Here’s a quite simple and easy recipe with a unique emulsion of coconut and lime flavor to linger in the tip of the tongue in one bite!

 

Prep: 30 minutes, plus cooling and setting

Servings: 8

Cooking: 1-1 1/4 hours

Difficulty level: Medium

 

Ingredients:

  • 175g of unsalted butter, softened plus extra for greasing
  • 175g of caster sugar
  • 3 eggs, beaten
  • 150g of self-raising flour
  • 85g of desiccated coconut
  • Grated rind and juice of one lime
  • 25g of shredded coconut, lightly roasted

 

Icing

  • 175g of icing sugar
  • Grated rind and juice of 1 lime

 

 

Method:

 

Step 1

Preheat the oven to 160 °Celsius. Grease a 20cm/8 inch round cake tin and finely line it with baking paper.

 

Step 2

Add the butter and sugar into a mixing bowl and cream together until light and fluffy. Gradually beat in the eggs. Then, sift the flour and gently fold in using a metal spoon. Fold in the desiccated coconut, lime rind and juice.

 

Step 3

Spoon the mixture into a prepared tray and level the surface. Then, bake in the preheated oven for 1-1 1/4 hours until risen, golden and firm to touch. Leave it to cool in the tin for 5 minutes and then turn it over onto a wired rack to let it cool completely.

 

 

Step 4

To make the icing, sift the icing sugar into the bowl and stir in the lime rind and juice to form a thick and smooth icing by adding a few drops of water, if necessary. Then, spoon the icing over the top the cake, allowing it to drizzle down the sides of the cake. Finally, scatter the shredded pieces of roasted coconut over the icing and leave it to set.
