Sachetorte

Prep: 40 minutes, plus cooling and setting

Servings: 10

Cooking: 1 hour 10 minutes- 1 hour 25 minutes

Difficulty level: Medium

 

Ingredients:

  • 175g of plain chocolate, broken into pieces
  • 140g of unsalted butter, plus extra for greasing
  • 140g of caster sugar
  • 6 eggs, separated
  • 175g of plain flour, sifted
  • Fresh strawberries for serving

 

Icing and Filling

  • 225g of plain chocolate, broken into pieces
  • 5 tbsp. of cold strong black coffee
  • 115g of icing sugar, sifted
  • 6 tbsp. of apricot jam, warmed

 

 

Method:

 

Step 1

Preheat the oven to 150 Celsius and grease a 23cm round spring form cake tin and finely line the base with baking paper.

 

Step 2

Add the chocolate into a heatproof bowl set over a saucepan of gently simmering water and heat until melted. Then, remove the heat and leave it to cool slightly. Add the butter and half of the caster sugar into a mixing bowl and cream it together until pale and fluffy. Add the egg yolks and beat well. Add the chocolate while beating well and fold in the flour. Whisk the egg whites in a separate bowl until soft peaks are made. Add the remaining caster sugar and whisk until stiff and glossy. Fold half into the chocolate mixture, the fold in the remainder.

 

Step 3

Spoon into the prepared tin and smooth the surface. Bake in the preheated oven for 1-1 ¼ hours, or until a skewer inserted into the center comes out clean. Leave it to cool slightly in the tin, then transfer onto a wired rack and leave it to cool completely and finally cut into two layers.

 

 

Step 4

To make the icing, melt 175g of the chocolate as above and beat in the coffee. Whisk in the icing sugar until thick. Sandwich together the layers of cake with jam. Spoon over the icing, spreading to coat the top and sides. Leave to set for at least two hours.

 

Step 5

Melt the remaining chocolate and spoon it into a piping bag fitted with a fine plain nozzle. Pipe ‘Sachetorte’ on top of the cake and leave it to set. Finally, serve with strawberries!
