Srilankan Cashew Curry
Cashew nuts these days are very common in the country side but it is bit expensive in the towns, Cashew nuts are used for various sweet dishes and from all that the Srilankan cashew curry is a superb dish which you can find in many occasions in srilanka. Today we are going to learn on how to make the srilankan cashew curry. So lets start.
What you need, 250 g Raw Cashews. 3 Cups thin Coconut milk (or water) 1 medium Onion, finely sliced 2 fresh green Chilies, finely sliced 2 cloves Garlic, mashed 1 Cinnamon stick 4 pieces of Rampe 8 Curry leaves 3 Tablespoons of Vegetable oil 1/4 Teaspoon of ground Turmeric 1 Tablespoon of Raw Curry powder 2 pieces of Goraka (if needed) 1 Cup of thick Coconut milk or you can use fresh milk as a substitute. How to Make, Place the cashews in a deep bowl, add some boiling water to it and close it with a lid and soak the cashews for about 5 hours or if possible overnight. Once it is soaked well drain the water from cashews and add salt, turmeric, raw curry powder, goraka and mix it really well until cashews are well coated with the spices. Heat the oil in a medium saucepan. Now to that add the onions, green chilies, mashed garlic, cinnamon and fry it until the onions are soft and turns into the colour of golden brown. Add the cashews to this mixture and keep mixing it until it is well coated with oil and onions. Now you can add the second extracted coconut milk or you can use water to it as well. Close with lid and cook on slow heat until the cashews are very soft and well cooked.Add the thick first extracted coconut milk or you can use fresh milk as well. Now and bring to a boil on slow heat.Turn off the heat. Add powdered salt to adjust and taste. Serve it to a dish...Now it is ready for the table. Your family will love the taste of it.
