Baking Double Chocolate Cookies

The word cookie shows reference to the meaning “small-cakes” which was first derived from the Dutch word ‘Koekie’. The reason to this was because, Cookies included most of the ingredients as cakes yet showed more prominence to sugar and fat.

Cookies are usually a mouth-watering, reasonably satisfying snack for tea-time or dessert. The following recipe is indeed quite simple and could be put together in only four steps. So enjoy this absolutely delicious crunch and here’s to all the chocolate lovers out there!

 

Prep: 25 minutes

Servings: 30

Cooking: 12-15 minutes

 

Ingredients:

  • - 225g of unsalted butter
  • - 140g of Caster sugar (powdered)
  • - 1 egg yolk, lightly beaten
  • - 2tsp vanilla extract
  • - 250g of plain flour
  • - 25g of Cocoa Powder
  • - A pinch of salt
  • - 350g of plain chocolate (chopped)
  • - 55g of dried cherries

 

The Dried cherries provide a good contrast of color and flavor to the rich chocolate in these cookies, you could also use dried cranberries if available, as another option to enhance the tartness in these cookies.

 

Method:

 

Step 1

Preheat the oven to 190° Celsius or 375° Fahrenheit, lining around two large baking trays covered with baking paper.

 

Step 2

Add the butter and sugar into a mixing bowl and beat it together until it is light and fluffy, then beat in the egg yolk and vanilla extract. Next, sift the flour, cocoa powder and salt into the mixture and then add the chocolate and cherries and stir until all the elements are mixed well.

 

Step 3

Scoop up tablespoons of the mixture and shape them into balls. Place them on the prepared trays, spaced well apart and flatten slightly.

 

 

Step 4

Bake in the preheated oven for 12-15 minutes and finally leave it to cool on the tray for 5-10 minutes. Once they are cooled, transfer the cookies to a wired rack to cool entirely.
